Classes get you hands-on training and instruction from our Birdie’s Market Executive Chef Hunter Wills and Executive Chef at Steel Magnolias Greg Yale and our culinary team of professionals, with a lot of tasting along the way, a booklet of recipes that you can use to recreate what you’ve made that day, and little appetizers using these food items to keep you exploring how to utilize your new techniques!

Did you know, that with a few easy culinary tricks and techniques, you can create textures and flavors that your familiar with in dishes that are predominately meat based and have only used vegetables? You can have amazingly complex and delicious dishes that use zero animal products and have you walking away feeling full and satisfied. 

Executive Chef at Birdie’s Market Hunter Wills, a raw-diet eater himself, will walk you through some of the foundational techniques to help you challenge your way of cooking towards one that is more inclusive to vegetables and fruit! If your vegan and looking for more culinary techniques to expand your cooking skills, your not vegan but want to incorporate more vegetables in your diet, or you are a budding chef who’s looking for the challenge to explore more cuisines, this two-hour class is for you!

There’s a little secret that chefs have had in their back pockets when it comes to killer cuisine and it goes by the name risotto. Big in Europe, risotto is a little known grain in South Georgia that can pack a big punch! It has the ability to become creamy just by the cooking process, without the need to add cream, so the possibilities are endless with such a fantastic dish component! 

Let Steel Magnolias Executive Chef Greg Yale walk you though the process of making risotto with some fantastic flavor combinations to take this simple grain in endless directions depending on what your hankering for dinner! Sample a number of ways to enjoy risotto and enjoy some appetizers to show you creative ways to use this technique in this two-hour class!

Steel Magnolia’s Executive Sous Chef Cory Bellant will show you how to make a show-stopping base to dozens of excellent french-style desserts and pastries with Danish Pastry, all you need is a little yeast, elbow grease and a lot of good butter! 

Tarts, Crostada, Tarte-tatin, Kouign-amann, Croissants, Turnovers, Mille-feuille (Napolean), and more are just a few of the desserts you can make with this one technique and it freezes well so you can have it on hand for any occasion. Each child leaves with 1/2 dozen cookies of their very own frosted creation and you leave with the peace of mind having gotten ahead on your holiday shopping at Birdie’s Market.

How much can one family contribute to their community from their family farm? Well when your talking about the Shaws, you will see it is this power-duo who are making big waves for Georgia! Gayla’s coming to town to talk about their superb product, Gayla’s Grits and Kevin, her husband, will be down to talk about how they came about to producing Georgia’s very FIRST olive oil! 

If you have ever eaten grits from either Steel Magnolias or Birdie’s Market, we exclusively use Gayla’s Grits in our dishes because we are so in love with their creaminess and flavor that only Gayla and her family are able to produce. And if you’ve ever been into Birdie’s Market and tried Georgia Olive Farms Olive Oil, you’ll see why we offer their oil in a fusti, an Italian stainless steel tank, so that you can refill any of your olive oil bottles with their “green gold," never more than a trip to town for your favorite, local oil. 

Come learn how this amazing family is helping put Georgia even more on the map with their unique and delicious products, grown and processed right on their farm in Lakeland, Georgia and why we are so proud to offer their products on our menus and in the market. We’ll also be pouring Farmer Daughter’s Vineyards’ wines during the event while you munch on hor d’ouerves using their products. We want to show the versatility in using real grits in your meals, because they aren’t just for breakfast! :) We’ll also be highlighting foods to elevate the clean and green taste that the Shaws’ oil is famous for and some cheeses to enhance nuances in flavor and notes.

In this all exclusive, three-fer, we are so excited to make this quite the social event! While pouring Farmer Daughter's delicious line of wines, we'll be highlighting Proper Pepper, Lauri Jo, and Preserving Place products in our delicious and new passed appetizers. While you munch and mingle, we'll have one of our chef's showing you how to make some of these unique appetizers yourself at a flaming action station! Meet the makers, learn about their stories, try their lines of artisan and local delectables, and watch our chef's go crazy on their creations! This Meet the Maker you DON'T want to miss! 

Proper Pepper Pimento Cheese is the love story between a girl and her pimento cheese that spans over a decade. This house-mom turned business professional is not joking when it comes to the classic cheddar-red pepper spread by using local ingredients, some secret spices and a lot of love. 

Preserving Place, based out of Atlanta, is at the forefront of the movement to capture the essense of Southern food by preserving our favorites in unique ways and flavors, for enjoying at any time. Vegetables and fruit are from local farmers and they use these connections to share their knowledge with you! 

Lauri Jo's family company started as a home-canning operation, using only local products and grandmother’s recipes of course. Over the years Lauri Joe was able to expand it into a full-fledge, international company with her business partner, Layne Varnedoe! And they puts their energies into their words, helping to develop the Georgia Grown label working with the Georgia Department of Agriculture and promoting agri-tourism. They makes sure their local, home-grown, and family-table tasting products are available all over the United States, but especially to all U.S. Naval bases worldwide. Meet Layne and learn how her and Lauri make their amazing products!

Meet Spencer Young, the man behind Grassroots Coffee originally from Thomasville, GA. He opened up a second shop in Valdosta in 2014 and now you can enjoy his awesome coffee at Birdie's Market and Catering!

Saturday, September 10, Birdie’s is so excited to be hosting Master YogiCarol Clary Herndon for a full hour and half of fun and energy-balancing yoga! 

She has an all-levels, mindful practice lined up for everyone who wants to “Let Go and Flow” as we say goodbye to summer to get ready for fall. This class is designed to connect your breath with movement, stretch and strengthen mindfully, and experience the subtle power of relaxation poses. Whether you are a regular practitioner, have had an acquaintance to yoga before, or would like to for the first time, Carol is truly an extraordinary teacher and has been practicing and teaching yoga for over 20 years.

Join us for a transformative time on the mats, followed by a hot tea service. On the backlight of soft candles, the guests will share a family meal of a delicious and restorative soup, salad, and entree designed by our chefs to compliment this rejuvinative yogic experience. All plates will be vegan friendly with non-vegan items offered on the side if guests should like to add to their dishes.

Birdie's Bottles and Brushes - A Wine Tasting and Painting Class! 

Date night just got a lot more adventurous! Join us at Birdie's Market in Downtown Valdosta for a painting class led by Kasey Lucas of The Crazed Canvas while enjoying a variety of Birdie's favorite house wines. Paired with our gourmet cheeses, local accompaniments, and complimentary hor'dourves, you'll build your palette as well as your palate. Seats are limited. Payment secures your spot.
